Day 3 Pinterest Challenge: Awesome Chocolate Chip Cookies!

After feeling the need to try a new cookie recipe simply because there HAD to be something out there better than nestle, I mean come on, they can't possibly have the absolute best cookies ever, right?  Hipster me says too mainstream.  So, to pinterest I went to find the ultimate recipe.  I searched a few cookie recipes and decided to try the one with the most likes/repins, which happened to be this one.  I didn't change anything, other than the amount of chocolate chips, and yes, they were the equivalent of a nestle chocolate chip cookie.  I haven't decided if I like them more or not, but the husband thinks they are better.  Of course, if you like crispy cookies, nestle wins, but if you are all for chewy gooey kindof crispy just along the edge kind of cookie, try this.  You won't be disappointed.

One more note!  This recipe is time consuming if you don't have a mixer.  It takes a bit of time to cream the butter and sugar, but it is entirely possible and they still taste awesome.

Here's the recipe:

Awesome Chewy Chocolate Chip Cookies:


Ingredients:

-3/4 c butter, softened

-3/4 c brown sugar

-1/4 cup granulated sugar

-1 egg

-2 tsp. vanilla

-2 c all purpose flour

-2  tsp cornstarch

-1 tsp baking soda

-1/2 tsp salt

-1 cup (ish) chocolate chips.  (I used semi-sweet.  The original recipe called for bittersweet.)
Directions:
Step 1:
Preheat oven to 350 F.  If you are baking your cookies on stoneware, don't forget to preheat the pan too!
Step 2:
Cream together sugars and butter until light and fluffy.  By hand, this takes 5-10 minutes depending on strength.  Next, add egg and vanilla until well blended.
Step 3:
Mix flour, cornstarch, salt, and baking soda until everything is all mixed up and tastes like delicious cookie dough, minus the chocolate chips.  Once that desire is reached, add the chocolate to complete the amazing dough.  (Ok, so you aren't -supposed- to eat raw egg, but this dough is AMAZING.  just sayin')
Step 4:
Drop dough onto the sheet.  Bake for 8-10 minutes until slightly golden brown along the edges.  The original poster said DO NOT BAKE LONGER THAN TEN MINUTES.
Step 5:
Let cool for five minutes.  Remove from baking sheet and let cool completely.
Want to freeze the dough?
If you don't want to cook all the cookies at once because they are so delicious that eating them all at once would be a bad idea, you can freeze the dough to be able to cook at a later time.  A brilliant friend gave me this idea, and it works wonderfully.
Just roll the dough into balls or scoops, and place on a plate that you can put in the freezer.  Make sure they aren't touching because cookie dough likes to stick to itsself.  Put the plate in the freezer for about ten to twenty or so minutes, just so the dough doesn't try to steal the chocolate chips from the other balls. 

Transfer all the dough balls to a ziplock bag and freeze.  Pull out and bake at 350 F for 10-15 mintues give or take whenever you want!
